I've got a Xbox, Wii and most recently (TODAY!!!) a 360.
Besides the consoles, I've got a Samsung DVD recorder with 80 gb harddrive and a digital cable box (the latter connected through the dvd so I can record from it)

No TV , I'm using a monitor instead connected throug DVI. EyeTV for my TV (576p FTW), VGA for the 360, S-Video for the iPod dock. Sound pops into a Realistic EQ, Rotel amp then into a pair of Rega Alya tower speakers.

2 dvd players (sony and apex), ps2, mediagate, all region vcr, and occasionally plug my laptop into the thing with an s-video cable and audio cables to watch videos or play games on a big screen, it's the sweetest thing evar!

Don't buy a ps2 unless you really want some ps2 exclusive. The Xbox is much better, especially if you mod it then you can use it as a GREAT media player as well. (stream videos from your computer) Also even a non-modded Xbox will still let you play DVDs in RGB (unlike ps2). You need to buy a dvd dongle though (modded xboxes can play dvds without it, but you can still use the remote that comes with it)

Well, if it was doing that when playing games, then you had it set to component instead of RGB... If you "fixed it" by changing the scart socket then it's likely that you put it on a SCART without RGB, so you're getting composite
