Reason and cubase is what I used. It is a real shame that the future looks bleak for Monkey Island.
Monkey Islands 1 to 3 were fantastic games but IMO Monkey Island 4 was too commercially oriented and came off as a bit weak in comparison. I mean, they focussed a lot on making 3d graphics (I MUCH prefer the 2d art style of MI3) and screwing around with the movement controls so that they could put it on PS2... but it wasn't as funny and the puzzles nowhere near as ingenius as the other 3 games (some of the MI4 puzzles are downright awful).
Now all lucasarts seem to have in the making is a new breed of technologically oriented action games, which, whilst they look promising, are for next gen consoles only, not PC, so they don't interest me. Not a whisper of monkey island apart from a few old MI4 april fools jokes.
I remember starting up MI3 for the first time; i'd played ther first two games so I was really anticipating MI3. From the intro sequence you already knew that despite having more pixels, nothing had been lost in translation and that the monkey island crew had done it again. I'd love to play a new monkey island game but it doesn't looks so hopeful that there will be another.
The annoying thing is, if they had done monkey island 4 right, it could have been at the very least a cult hit, and successful enough to warrant another sequel.

Yeah. The adventure games aren't like they used to... I never managed to beat MI4 because of Le Chuck's monkey combat skills
You should try Grim Fandago, if you haven't already.
Which is actually an amazing game, it beat Half-life, Zelda Ocarina of time and StarCraft in the "gamespot game of the year award". Still, theres not that many that played it... The adventure games aren't that popular like they once was, and I think many developers are afraid to make them these days.
Ah right, grim fandango never really appealed to me because it looked very similar to MI4, same engine in fact, I think. I should probably give it a try though
Ah yes, lechuck's monkey combat skills. I'll give you a clue, like a lot of other MI4 puzzles it is completely unintuitive and there isn't really any clue whatsoever to encourage you to do the thing that results in you winning. I discovered it by accident.

If you haven't already, play Psychonauts. It's a hilarious psychic-themed action-adventure platformer by Tim Schafer, the guy behind Full Throttle, Day of the Tentacle, and Grim Fandango. (Grim was *amazing* if you can find a copy. Some of the puzzles are a bit obtuse but the story and characters more than make up for it.) The new Sam and Max games are consistently amusing, and I'm also looking forward to A Vampyre Story, also by a Lucasarts alum.
