Just to name a few.
You'll also want to download Advanced Task Killer to let you kill running apps that are using up ram. Call Confirm is also useful for adding an extra dialog between hitting a call button and it calling, that way you don't accidentally make a call by brushing up on the Call button in contacts.
Might I also suggest Handcent to replace the stock texting app (assuming you text at all). Its not much different from stock, it just adds a lot more settings for you to change including a vibration pattern.

Other than what I already suggested, check out Pandora, Android Lightsaber (awesome), Astro file explorer, DroidLight, Dropbox, Google Sky Map, Movies (if you go to theaters at all. Also check out imdb's app), RemoteDroid, ShopSavvy (use this a lot), Google Voice voicemail link, TiKL, Voice Recorder, and if you do any craigslisting, Craigsnotifica.
Is that enough?

Might I also suggest: Better Cut, Beautiful Widgets, Missed Call, RealCalc, and if you plan to root your device, SetCPU to overclock and Root Explorer to delete pesky Verizon apps. Oh and Dolphin Browser is pretty nice too, but I've kind of migrated back to the default browser cause it supports Flash on Android 2.2.
