Quake 3 standard is just deathmatch, UT has many many game modes with mutators somewhat intelligent bots (as opposed to th "cheapness" of quake 3's bots)
Quake III Arena is fun for a while, as it has a more arcadey feel than Unreal Tournament - the gameplay is typically faster and simpler. However, even though I only play DM games I prefer Unreal Tournament, as the balance of the weapons seems to be better (in the Quake series the weapons are often far too powerful for their own good)... and also because of UnrealEd, which if you ask me is the best 3D editor ever made.

the music in ut has got to be one of the best pc soundtracks in games ever!
for those who own ut, get a mod player and listen to the tunes they are mods!

I think the classic of John Carmack is one of best game ever: a true Masterpiece.
I have finished both games, so I can say what I like or dislike from both subjects.
In UT maps are bigger, more complex and probably with a better trategy-design, but tha's the only better thing:
First, weapons in quake are better designed.
For example, in UT sniper is too damn strong easy to use, and somene once fragged could'nt have no idea about what's happened, or in other words WHERE THE HELL tha camper-sniper was...
Instead, the railgun of q3 left a path, so you can see the fragger position, so the challenge is equilibrate: I also think in q3 doesnt exist a better weapon, each one has a his own way to be used, and a different style of combat.
They are perfecly balanced.
When you are fragged, you can see who fragged you direcly: (the camera center the fragger), instead in UT you have to read messages every time...
There are a lot of great stuffies that in ut you will not find so interesting.
For example, it's incredible awesome when you kill someone and make him exlode turning him into a cloud of floating blood, expecially when you shot a rocket into a crowd, maybe passing trought the rumble... whooooah! EXELLENT!!!
The art and conceptual job in UT was one of horriblest ones, ever. Man, the design of arenas is good, ok, but estetichally textures, models, bots and everything are really boring, discounted and already seen somewhere... Graphic isnt good neither: is possible to see poligons and a lot of raw things.
Bots are all equals: you will not remember any name trought the challenge, just you will see for a couple of seconds the body, and hear some small sound.. but nothing else.
The style of Q3 intead is Unique: arenas are a show for eyes, models of everything are original and amazing, the soundtrack is gore and fit perfectly with shootouts, sound is great (I love hear the sarge with "exellent, exellent, exellnt...")
Bots are perfecly characterized: you will remember their name, movement, style of combat and behavior (you can see them taunting once you're fragged, in UT nothing of this is concepible neither)
And finally, the enviroment is great and unique. UT's one is boring and have a style that sucks really.
And the directing is the worse thing: I hate presentation, music and characterizing of the folk: for example, the final boos looks a mazinga from a japanese cartoon old style and its really arrogant and stupid, saying bullshits like "I am alpha and Omega" MAN! I HATE THIS GAME!!!
And finally, the most important feature about the pure gameplay: Only and ONLY in quake3 you can really enjoy in virtuosistic shootouts.
Movements, jumps and flyes while shooting are amazing, you can really feel a god while flying between boucers into a massacre shooting to everythig moves... till it stops.
Well, maybe it's just a matter of tastes, but in my opinion all this stuff and make UT looks a ****.
