I like the idea of nunchucks in games, and also the idea of penguins, so I've come to the conclusion that the best thing you can have in a game is Nunchuck wielding Penguins.
besides gameplay, and nonlinear, i think little things in games make it really shine. like grass moving a bit when you step on it, a ring bouncing a bit when it hits the ground, a little bit of rain before the acual storm. You know the little things

If that's a bit too general, I'd say um... realism. Games could be so much better if people just add that little dose of realism. I don't mean anything annoying like being forced to eat every few minutes or 'relieving yourself'. It's the little things like not being able to create tanks out of pure money, scientifically explaining magic, bringing over research to the next level (instead of re-researching it in 2 minutes), etc. Real life can be more fun than fantasy, if you just put a little effort into it.
BTW, people don't really notice the little special effects things, but when they do, it does make a difference. Sadly, the little special effects, like in Neverwinter Nights, often doesn't cover up major flaws like the overall graphics and game speed.
